Greek Quesadillas with Yogurt Sauce

You can have a healthy dinner ready in 10 minutes with these super easy Greek quesadillas! Sun dried tomatoes, olives, feta cheese, mozzarella, fresh spinach and red onion sandwiched between two crispy, whole wheat tortillas and served with classic yogurt dipping sauce!


  • 8 whole wheat tortillas
  • 2 cups shredded mozzarella
  • 1 cup fresh baby spinach
  • 1/4 cup julienne cut sun dried tomatoes
  • 1/4 cup sliced green olives
  • 1/4 cup sliced black olives
  • 1/4 cup crumbled feta cheese
  • 4 teaspoons diced red onion
  • 4 teaspoons julienne cut fresh basil
  • Garnish:
  • fresh chopped parsley
  • creamy yogurt sauce


  1. Heat a large saute pan over medium low heat. Add 1 whole wheat tortilla along with a 1/4 cup of shredded mozzarella. Add 1/4 cup fresh spinach and 1 tablespoon sun dried tomatoes.

  2. Then add 1 tablespoon each green olives, black olives and feta cheese.

  3. Add 1 teaspoon each diced red onion and thinly sliced basil.

  4. Add another 1/4 cup of shredded mozzarella cheese.

  5. Top quesadilla with another whole wheat tortilla.

  6. Cook for 2-4 minutes on each side or until each tortilla gets dark golden brown and crispy.

  7. Serve with the most divine yogurt sauce everrrrrrrrr.
